Field proces

The Beemster is a reclaimed polder north of Amsterdam and is one of the world heritage sites. This unique fact has to do with the perfect square allotment pattern. The story goes that this pattern was copied in America to create the street plan of Manhattan.

Fresh garlic is grown more sustainably than dried garlic because the growing period is shorter: the bulb is harvested young, when it is vigorous and healthy. It is planted in October/November and harvested at the end of June/beginning of July using a top harvester, which pulls the garlic up by its stem and cuts the roots loose with a knife.

When the garlic has been harvested, the bulbs are processed in the shed or stored in cold stores. At the customer's order, the roots and top of the stem are cut off and the outer skins are removed. This way you end up with a beautiful white bulb with a green stem.
